Floofy Pancakes
Sometimes dessert for breakfast is called for, in some cases its absolutely necessary! Therefore, what better dessert to have than pancakes? And, not the lovely thin ones called ‘crêpes’ that the French are so fond of, but the really thick American style ones! This new recipe that is family approved - my family try all of my cooking (or maybe they’re just greedy?) Either way these pancakes are super fluffy and light. Best served with a light dusting of icing sugar and syrup washed down with a glass of orange juice!
Ingredients:
6oz of self raising flour
1tsp of baking powder
2 eggs
1/4 cup of caster sugar
180ml of coconut milk
1 tsp of coconut oil (melted)
Method:
Sift together the flour and the baking powder together in a bowl.
separate ate the egg yolks from the egg whites and whisk the egg whites until stiff peaks have formed
Add the sugar, milk and egg yolks until smooth. At this point add the melted coconut oil.
carefully fold in the egg whites until completely mixed in.
The mixture will be very thick so on a large pan you can fit at least three mini pancakes on there. The pancakes cook very quickly so you only need to flip them once and see how they rise!
Serve immediately and enjoy! However, if you are American and you’re reading this, go ahead and add some sausages and bacon. Just go easy on the syrup ;)
Allergy: contains eggs, wheat. I cannot promise that there are no traces of nuts in this recipe!
